ERIC KAYSER BOULANGERIE / BOGOTA / 2013 - 2014 

This project marked the launch of the first flagship location of the world-renowned bakery Maison Kayser in Bogotá. Due to the building’s heritage-listed status, the project presented a high level of technical complexity. The comprehensive program included the integration of a bread production line, pastry production line, cold storage, freight elevator, hot and cold kitchens, refrigerated pastry displays, beverage and bread displays, as well as interior and exterior seating areas for customers, an office, and storage spaces.

The existing structure of the house required reinforcement, and new mechanical, electrical, and plumbing systems had to be designed to meet the demands of this state-of-the-art bakery and pastry shop. We meticulously designed and coordinated every aspect of the project, from the overall architectural layout and structural design to the MEP systems, interior design, lighting, and even the smallest details like refrigerated pastry displays, bread displays, sofas, and tables. In Colombia, the absence of shop drawings from general contractors, contractors, or suppliers often means that architects bear a significant load of responsibility and coordination, which was the case for this project.

The concept for the interior design focused on creating a calm and sophisticated space that harmonizes with the original structure of the house. The walls were finished in a light, cool grey tint, while the counters were crafted from white Carrara marble. Pale cerulean blue leather sofas and white oil-stained wood tables and details further enhance the serene and elegant atmosphere.
